Today is certainly a day for some home baking! Instead of buying cereal with added sugars and goodness knows what else, why not make your own using my easy to make healthy, homemade granola recipe; you know exactly what’s in it and you can tailor the recipe to suit your taste. It may not be cheaper than your ordinary cereal but I think it’s 100% worth it.

One of my favourite granola recipes is this one from Mindful Chef that I’ve adapted. It’s prepared, baked and in the containers within 30 minutes and smells and tastes delicious!

Ingredients

  • 150g rolled porridge oats
  • 100g pecans
  • 50g flaked almonds
  • 30g sunflower seeds
  • 30g pumpkin seeds
  • 30g flax seeds
  • 30g desiccated coconut
  • 3 tsp ground cinnamon
  • pinch of salt
  • 3 tbsp golden syrup
  • 3 tbsp coconut oil (liquid)
  • 30g raisins

Method

  1. Pre-heat oven to 180C
  2. Put all the dry ingredients into a bowl except the raisins and mix together.
  3. Add in the oil and the golden syrup stir until everything is evenly coated.
  4. Prepare 2-3 baking tray with baking parchment. Spread the mixture loosely and evenly over the baking parchment and place in the oven for 20 minutes, stirring the granola after 10 minutes.
  5.  Leave to cool before sprinkling over the raising and placing in containers.
  6. Enjoy!

The Mindful Chef recipe book is full of easy to make recipes that don’t require exotic ingredients. I must have tried over 10 recipes so far from the book and nearly all of them, I would make again. If you’re after some simple food which tastes amazing (and looks good), that may be a bit different to what you’re usually used to, then I would recommend giving this a go.
